Soy-Glazed Edamame

No fussy shelling required with these savory-sweet soy-glazed edamame pods. Simply insert a whole flavorful pod in your mouth and suck out the tender beans inside. Toss the edamame with the soy mixture while they're still warm from cooking to readily absorb the sauce.

1 package (12 oz) frozen edamame in the shell (about 4 cups)
1 tsp canola oil
1 small clove garlic, minced
1-inch piece fresh ginger, peeled and minced
2 Tbsp reduced-sodium soy sauce
2 Tbsp water
1 Tbsp rice vinegar
1½ Tbsp brown sugar
½ tsp red pepper flakes and/or toasted sesame seeds

Cook the edamame according to the package directions.

Meanwhile, warm the oil in a small frying pan over medium- low heat. Add the garlic and ginger and cook, stirring to prevent burning, until softened, 1-2 minutes. Stir in the soy sauce, water, vinegar, and brown sugar and cook, stirring, over medium heat until reduced slightly, about 1 minute.

When the edamame is ready, drain it in a colander set in the sink, then transfer it to a bowl. Pour the soy sauce mixture over the top and toss well to coat evenly. Sprinkle with the red pepper flakes and/or sesame seeds, and serve.
