Superfood Kale & Quinoa Salad

A healthy mix of kale and quinoa provides an excellent protein- and fiber-rich building block for any superfood blend. Goji berries and avocado add flavor, as well as a healthful blend of vitamins and nutrients.

FOR THE LEMON VINAIGRETTE
2 Tbsp lemon juice
1 Tbsp white wine vinegar
¼ cup olive oil, or to taste
Salt and pepper to taste

FOR THE SALAD
2 cups baby kale or mixed kale and spinach
1 cup cooked quinoa
2 small carrots, thinly sliced
2 Tbsp fresh mint leaves
2 Tbsp toasted sliced almonds, roasted pepitas, or toasted pecans
1 Tbsp sesame seeds
1 Tbsp goji berries
¼ avocado, peeled and sliced

To make the vinaigrette, in a jar with a lid, combine all the ingredients. Cover and shake until evenly blended. Taste and add more olive oil, salt, or pepper if needed.

To make the salad, in a bowl, toss together the kale, quinoa, carrots, mint, nuts, sesame seeds, and goji berries. Just before serving, add the avocado and vinaigrette and toss gently to mix.
